Cocoa Cola Cake Recipe

Ingredients
  • 1/3 c regular cola
  • 2 eggs
  • 1/4 c baking cocoa
  • 1/2 c butter or margarine, cubed
  • 4 c confectioners' sugar
  • FUDGE FROSTING:
  • 1 tsp vanilla extract
  • 1 c regular cola
  • 1 (18.25 oz) package white cake mix
  • 1 1/2 c miniature marshmallows
  • 1/2 c buttermilk
  • 1 c sliced pecans, toasted
  • 1/2 c butter or margarine, melted
  • 1/4 c baking cocoa

Directions
  • Step #1 In a large mixing bowl, mix the first seven ingredients.
  • Step #2 Beat on medium speed for 2 mins.
  • Step #3 Fold in marshmallows.
  • Step #4 Pour into a greased 13-in.
  • Step #5 x 9-in.
  • Step #6 x 2-in.
  • Step #7 baking pan.
  • Step #8 Bake at 350 degrees F for 35-40 mins or until a toothpick inserted near the center comes out clean.
  • Step #9 Cool on a wire rack for 15 mins.
  • Step #10 Meanwhile, for frosting, mix cocoa & butter in a saucepan.
  • Step #11 Cook over low heat/flame until butter is melted.
  • Step #12 Stir in cola until mixed.
  • Step #13 Bring to a boil, stirring constantly.
  • Step #14 Remove from the heat; stir in the confectioners' sugar until smooth.
  • Step #15 Fold in pecans.
  • Step #16 Spread over cake.
  • Step #17 Let stand for 20 mins before cutting.
