Roasted Asparagus With Goat Cheese And Bacon Recipe

Ingredients
  • 4 oz log soft fresh goat cheese, crumbled .
  • 2 tsps fresh lemon juice .
  • 1 tsp lemon peel, grated .
  • 2 lbs medium asparagus, tough ends trimmed .
  • 2 tbsps olive oil .
  • 6 slices bacon .
  • 2 tsps olive oil

Directions
  • Step #1 Cook bacon in heavy large skillet over med-heat/flame until brown & crisp.
  • Step #2 Transfer to paper towels & drain.
  • Step #3 Crumble & set aside.
  • Step #4 Position rack in center of oven & preheat to 500 degrees.
  • Step #5 Arrange asparagus on large rimmed baking sheet.
  • Step #6 Drizzle with 2 T.
  • Step #7 oil & turn to coat well.
  • Step #8 Sprinkle top generously with salt & pepper.
  • Step #9 Roast asparagus until crisp-tender when pierced with knife, about 7 mins.
  • Step #10 Arrange asparagus in single layer on platter.
  • Step #11 Sprinkle top with goat cheese, then bacon.
  • Step #12 Drizzle with lemon juice & remaining 2 t.
  • Step #13 oil.
  • Step #14 Sprinkle top grated lemon peel over.
  • Step #15 If not serving right away, cover & serve at room temp later.
