Cranberrycebox Cookies Recipe

Ingredients
  • 2/3 c sugar
  • 1 c packed brown sugar
  • 2 c sliced fresh or frozen cranberries
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 c sliced walnuts
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/4 c butter (no substitutions), softened
  • 1/4 tsp almond extract
  • 3 1/4 c all-purpose flour

Directions
  • Step #1 In a mixing bowl, cream butter & sugars.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Beat in extracts.
  • Step #4 Combine the flour, baking powder, salt & baking soda; slowly add to the creamed mixture.
  • Step #5 Stir in walnuts.
  • Step #6 Carefully stir in the cranberries.
  • Step #7 Shape into three 7-in.
  • Step #8 rolls; wrap each roll in plastic wrap & put in the fridge for 4 hrs or overnight.
  • Step #9 Cut into 1/4-in.
  • Step #10 slices & place 1 in.
  • Step #11 apart on ungreased baking sheets.
  • Step #12 Bake at 375 degrees F for 10-12 mins or until golden brown.
  • Step #13 Cool on wire racks.
