Breakfast Barley Recipe

Ingredients
  • 1 cinnamon stick .
  • 1 c raisins (optional) .
  • 4 c water .
  • 1/2 c pearl barley, rinsed & drained .
  • 1 tbsp lemon juice .
  • 2 c apple cider or unsweetened apple juice

Directions
  • Step #1 Bring water to a boil In a large-ish saucepan.
  • Step #2 Add the barley & the cinnamon stick.
  • Step #3 Cook slowly over low heat/flame for about 45 mins or until most of the water is absorbed, stirring every once in awhile.
  • Step #4 Add the lemon juice, apple cider & raisins, if you are using them.
  • Step #5 Continue cooking over low heat/flame, stirring frequently, until most of the liquid is absorbed & the barley is thick, about 30 more mins.
  • Step #6 Serve with milk or soy milk or eat plain.
