Congolais Recipe

Ingredients
  • 6 oz sugar .
  • 3 egg whites .
  • 7 oz coconut, shredded .
  • 1/3 oz vanilla sugar

Directions
  • Step #1 Preheat oven at 400°F; prepare a baking sheet.
  • Step #2 Pour the egg whites, sugar & vanilla sugar into a saucepan over med-heat/flame, then start whisking vigourously until they get hot & frothy.
  • Step #3 Take away from flame & keep whisking until temperature cools down a bit.
  • Step #4 Pour the shredded coconut in all at once & mix together with a wooden spoon.
  • Step #5 Place balls of coconut mixture on the baking sheet (about 2.
  • Step #6 5 inches in diameter).
  • Step #7 Bake for 15 mins until they get golden; the Congolais must be crunchy outside & soft inside.
  • Step #8 Serve the biscuits warm or cold, simply by themselves or with a ball of vanilla ice-cream.
