Texas 'caviar' Recipe

Ingredients
  • 1 tbsp salt .
  • 2 (16 oz) cans black-eyed peas, drained .
  • 1 (16 oz) can sweet corn or 2 c frozen corn .
  • 1 tbsp garlic powder .
  • 1 tbsp sugar .
  • 1 tbsp ground cumin .
  • 1 hot pepper, sliced fine, I use a jalapeno (optional) .
  • 1 (4 oz) can sliced green chilies .
  • 1/4 c Italian dressing .
  • 1 (4 oz) can black olives, sliced .
  • 1 stalk celery, sliced .
  • 1 tsp black pepper .
  • 1 large sweet onion, sliced .
  • 1 large bell pepper, sliced .
  • 1 tbsp garlic, minced .
  • 1 large tomato, seeded & sliced

Directions
  • Step #1 Drain liquid from canned items & mix all ingredients.
  • Step #2 Chill overnight or for several hrs.
  • Step #3 Serve with tortilla chips or pita chips.
