Slow Cooker Pozole - Pork Recipe

Ingredients
  • 1/2 tsp ground cumin .
  • 1/2 tsp thyme .
  • 6 plum tomatoes, stems removed .
  • 1 tsp salt .
  • 1 lb country-style boneless pork ribs, cut 1 in. squares .
  • 1 tsp chili powder .
  • 1 (15 oz) can white hominy .
  • 1 (15 oz) can yellow hominy .
  • 1 tsp minced dried poblano chiles .
  • 1 small onion, sliced

Directions
  • Step #1 Saute the pork in a non-stick skillet until halfway cooked, remove.
  • Step #2 Leave fat in skillet & saute the onion.
  • Step #3 Add the meat, the onion & all the remaining ingredients to the crock pot & cook on low heat for six to eight hrs.
  • Step #4 Serving Suggestions: Pozole can be served in large flat bowls, garnished with fresh cilantro with warm corn bread on the side.
  • Step #5 Avocado slices & fresh lime can be passed, along with hot sauce or salsa.
