Broiled Mushrooms Recipe

Ingredients
  • 6 tbsps fresh lemon juice .
  • 4 tbsps parsley, coarsely sliced .
  • 2 tbsps olive oil .
  • fresh ground black pepper, to taste .
  • 4 garlic cloves, finely minced .
  • 1 lb fresh shiitake mushrooms or oyster mushrooms, stems removed (try a mix!)

Directions
  • Step #1 Preheat the broiler.
  • Step #2 Clean the mushroom caps with a damp papaer towel.
  • Step #3 Save the stems for stock or to flavor sauces.
  • Step #4 In a small bowl, mix 4 tbls.
  • Step #5 of the lemon juice,the garlic, 3 tbls.
  • Step #6 of the parsley, & the oil & pepper.
  • Step #7 Mix well.
  • Step #8 Line a 17x11" jelly roll pan with foil wrap.
  • Step #9 Arrange the mushrooms,top side up, on the foil wrap, & brush genorously with the lemon juice mixture.
  • Step #10 Place the mushrooms 4 inches from the heat & broil until just tender, 5 to 7 mins.
  • Step #11 To serve, sprinkle the mushrooms with the remaining 2 tbls.
  • Step #12 lemon juice, 1 tbls.
  • Step #13 of parsley, & pepper to taste.
