Peanut Butter Cup Cookies Recipe

Ingredients
  • 1/3 c baking cocoa .
  • 1 1/2 c all-purpose flour .
  • 2 c quick-cooking oats or old fashioned oats, uncooked .
  • 2 large eggs .
  • 2 tsps vanilla .
  • 1 tsp baking soda .
  • 9 oz peanut butter c, unwrapped & cut into quarters (about 35 miniature candies) .
  • 1/2 lb margarine or butter, softened .
  • 1 1/2 c brown sugar, firmly packed .
  • 3/4 c peanut butter (not reduced-fat) .
  • 1/4 tsp salt (optional)

Directions
  • Step #1 Heat oven to 350°F In large bowl, beat sugar, margarine & peanut butter until creamy.
  • Step #2 Add eggs & vanilla; beat well.
  • Step #3 Add mixd flour, cocoa, baking soda & salt; mix well.
  • Step #4 Add oats & candy; mix well.
  • Step #5 Drop dough by level 1/4 c portions 3 inches apart onto ungreased cookie sheets.
  • Step #6 Bake 12 to 14 mins or until cookies are slightly firm to the touch.
  • Step #7 (Do not overbake.
  • Step #8 ) Cool 1 min on cookie sheets; remove to wire rack.
  • Step #9 Cool completely.
  • Step #10 Store tightly covered.
