Thai Shrimp Recipe

Ingredients
  • 1 tbsp cooking oil .
  • 4 garlic cloves, minced .
  • 2 tsps brown sugar .
  • 1/4 tsp dried red pepper flakes .
  • 1 lb raw shrimp, peeled & deveined (31 to 40 count) .
  • 2 medium jalapenos, minced .
  • 1 tbsp lime juice .
  • 1/2 c jasmine rice, cooked as per package instructions .
  • 1/4 c fresh mint, sliced .
  • 4 green onions, cut on diagonal in 1 inch lengths .
  • 1/4 c fresh basil, sliced .
  • 1 tsp Thai fish sauce .
  • 1 tsp cornstarch

Directions
  • Step #1 In a small bowl, fish sauce, brown sugar, mix the lime juice, & cornstarch; set aside.
  • Step #2 Place a skillet or wok over medium-high heat & add the oil, garlic & jalapenos; sauté for 2 mins, add the shrimp, red pepper flakes & continue to cook this until shrimp turn white; 3 to 5 mins more.
  • Step #3 Add the basil & mint; stir in the the lime juice mixture & cook an extra 2 mins; or until shrimp are pink & thoroughly cooked serve over a bed of jasmine rice.
