Brussels Sprouts Salad Recipe

Ingredients
  • 1 1/2 lbs Brussels sprouts or 2 (10 oz) packages frozen Brussels sprouts .
  • 1/2 tsp dried thyme .
  • 1 tbsp fresh chives, minced .
  • 1/4 c wine vinegar .
  • 2 c vegetable broth .
  • 1 tbsp fresh dill, minced .
  • 12 cherry tomatoes, halved .
  • 1/4 tsp pepper .
  • 1 tsp salt .
  • 1/2 tsp dried tarragon .
  • 2 tbsps olive oil

Directions
  • Step #1 If using frozen brussels sprouts, cook according to package directions with broth instead of water.
  • Step #2 If using fresh, wash well & trim all outer leaves.
  • Step #3 Bring broth to a boil & add sprouts.
  • Step #4 Bring to a boil again & cook uncovered for 15 mins or until tender.
  • Step #5 Drain sprouts & place this in a bowl.
  • Step #6 Pour vinegar & oil over the top & sprinkle with dried spices, salt & pepper.
  • Step #7 Toss to coat.
  • Step #8 Chill for 2-3 hrs or overnight.
  • Step #9 Halve the tomatoes & add to sprouts.
  • Step #10 Taste for seasoning.
  • Step #11 Sprinkle top with fresh chives & dill before serving.
