Catfish (pan Fried) Recipe

Ingredients
  • 4 (6-6 1/2 oz) catfish fillets .
  • 3/4 c yellow cornmeal .
  • 1 tsp salt .
  • 1/4 c all-purpose flour .
  • 1 c vegetable oil .
  • 1 tsp garlic powder .
  • 2 tbsps minced parsley .
  • 1/2 tsp dried thyme .
  • 1/2 tsp onion powder .
  • 1/2 tsp black pepper .
  • 1/4 c lemon juice .
  • 1/2 tsp dried oregano

Directions
  • Step #1 Place catfish into a shallow bowl or baking dish.
  • Step #2 In another smaller bowl mix all of the seasonings.
  • Step #3 Spice up the filets with half of the seasonings.
  • Step #4 Add the lemon juice.
  • Step #5 Turn the catfish filets several times to coat evenly.
  • Step #6 Allow to stand at about room temp 15 mins.
  • Step #7 Combine the cornmeal, flour & the remaining seasoning mixture in a bowl.
  • Step #8 Remove the catfish filets from the marinade & dredge in the cornmeal mixture, coating evenly.
  • Step #9 Heat the oil In a large-ish, deep skillet over medium-high heat.
  • Step #10 When the oil is hot, add the catfish & fry in batches until golden brown on both sides, turning once, 3 to 4 mins per side.
  • Step #11 Remove the catfish from the skillet with a slotted spatula, drain on paper towels & serve.
