2 1/2 lbs carrots, sliced diagonally into about 1/2-inch slices (or smaller) .
water, for boiling .
1/2 c honey (or to taste) .
1 c slivered almonds (preferably toasted) .
1/4-1/2 tsp ginger powder
Directions
Step #1 Place the sliced carrots in a saucepan, & cover with water just to cover the carrots.
Step #2 Bring to a boil, & cook this until JUST crisp-tender (about 7-8 mins, do not over cook the carrots as they will cook more in the oven) drain VERY well (I soak up any excess water with a paper towel).
Step #3 In a large mixing bowl, honey, whisk the butter, lemon juice, ginger & pepper (add in salt if desired) together very well.
Step #4 Add in carrots, mix & coat well with the honey mixture.
Step #5 Transfer the mixture into a buttered 2-quart casserole dish.
Step #6 Sprinkle top with raisins; mix slightly.
Step #7 Cover up & bake in a 350 dedgree oven for about 30-35 mins, or until carrots are tender.
Step #8 Sprinkle top with slivered almonds just before serving.
