Mulled Wine A La Kolibri Recipe

Ingredients
  • 100 ml vodka .
  • 2 small orange rind, & a thick slice .
  • 15 whole cloves .
  • 150 ml brown sugar .
  • 3 sticks cinnamon .
  • 1 lemon rind, & a thick slice .
  • 1 tsp whole cardamom seeds .
  • 750 ml bordeaux dry red wine .
  • 3 pieces fresh ginger .
  • 100 ml port wine

Directions
  • Step #1 Crush all the spices to release the aromas.
  • Step #2 Mix them with the vodka & port wine.
  • Step #3 Wash the lemon & the oranges (I used blood oranges) very well, & peel them.
  • Step #4 Add peel to the mixture.
  • Step #5 Slice a thick slice of both fruits & put them in too.
  • Step #6 Peel ginger & chop into bitesize pieces, add the pieces in the liqueur.
  • Step #7 Smell the mixture but resist temptation & put it into an airtight container & to the frige overnigth, or 24 hrs if possible.
  • Step #8 Next day, drain the spices from the liqueur, & mix it with the sugar & the wine.
  • Step #9 Stir until sugar is dissolved.
  • Step #10 Now's the good part - tasting.
  • Step #11 I've put quite a lot sugar in because I like my mulled wine sweet, but make yours according to your preference.
  • Step #12 If it's too sweet, & if it's too tart, add more wine, add more sugar.
  • Step #13 Heat up only the amount you're going to drink, & you can keep the rest until it's needed.
  • Step #14 Microwave is really good for heating up mulled wine, but if you heat it up in a pan make sure it doesn't boil.
  • Step #15 Serve with raisins & almond chips.
