Ingredients
1/2 c ketchup .
4 c vegetable oil .
1 tsp salt .
2 tbsps vegetable oil .
2 tbsps sliced scallions (white part only) .
2 tsps sesame oil .
1 c cornstarch (in a plastic baggie) .
1 tsp granulated sugar .
1/2 c granulated sugar .
1 tsp grated orange zest (wash orange well before) .
1 c water .
1 lb chicken breasts .
4 tsps cornstarch .
1 1/2 tbsps soy sauce .
1 large egg white .
1/8 c vinegar
Directions
Step #1 Cut chicken breast into 1/2-inch cubes; set aside.
Step #2 Make marinade: Combine egg white, salt & sugar in a bowl & stir vigorously until ingredients are thoroughly mixed.
Step #3 Add chicken cubes to marinade & stir this to coat well.
Step #4 Let marinate while preparing the sauce.
Step #5 Make orange sauce: In a bowl, sugar, soy sauce, mix water, ketchup, vinegar, 4 tsps cornstarch & sesame oil; stir & set aside.
Step #6 Place a pot over high heat.
Step #7 When pot is hot, add the 2 tbsps vegetable oil & heat.
Step #8 Add orange peel & scallion & stir for about 20 seconds, taking care not to burn the orange peel.
Step #9 Pour mixd sauce ingredients into the pot & cook, until sauce has thickened, stirring frequently, about 12 to 15 mins.
Step #10 To finish: Preheat 4 c oil to 350-375°F.
Step #11 Meanwhile, put marinated chicken in the plastic baggie containing the cornstarch.
Step #12 Shake chicken well for about 20 seconds or until chicken is covered with cornstarch.
Step #13 Shake off all excess cornstarch & fry chicken in hot oil until golden brown, approximately 2 1/2 mins.
Step #14 Remove chicken from oil with a slotted spoon, drain well & set aside.
Step #15 Add fried chicken to pot with heated orange sauce, stir for about 30 seconds, then serve as soon as possible.
Step #16 Serve with steamed rice.
