Easy Pineapple-dijon Garlic Chicken Recipe

Ingredients
  • 1/4 c honey .
  • 1 (20 oz) can unsweetened pineapple slices .
  • pepper .
  • garlic powder (optional) .
  • 3-4 tbsps oil .
  • 2 tbsps minced fresh garlic (an use more, or to taste) .
  • seasoning salt (can use regular salt) .
  • 1 tbsp cornstarch .
  • 1-2 tsp dried thyme (rubbed between fingers to release flavors) .
  • 4 boneless skinless chicken breasts .
  • 1/4 c Dijon mustard

Directions
  • Step #1 Drain the pineapple, reserving juice, & cut the pineapple rings in half; set aside.
  • Step #2 In a bowl, mix the cornstarch & 2 tbsps of pineapple juice until smooth; set aside.
  • Step #3 In another bowl, mix/whisk together mustard, honey, garlic & remaining pineapple juice; mix well to mix; set aside while browning chicken.
  • Step #4 Spice up chicken with thyme, seasoning salt (or regular salt) pepper & garlic powder (if using).
  • Step #5 In a skillet brown the chicken on both sides in oil.
  • Step #6 Add in the honey/mustard mixture to the pan; bring to a boil.
  • Step #7 Reduce heat, cover & let simmer for 20 mins (longer if using bone-on chicken pieces) or until juices run clear.
  • Step #8 Remove the chicken to a plate to keep warm.
  • Step #9 Stir/whisk in cornstarch mixture to the pan; bring to a boil, & stir for about 2 mins.
  • Step #10 Return chicken to the pan.
  • Step #11 Top with pineapple slices, & heat through.
