Buttermilk Bannock Recipe

Ingredients
  • 3/4 tsp baking soda .
  • 1 1/2 c buttermilk .
  • 1 tsp salt, to taste .
  • 2 eggs .
  • 1 c raisins .
  • 3 tsps baking powder .
  • 4 c all-purpose flour or bread flour

Directions
  • Step #1 Stir flour, baking powder, salt, baking soda & raisins together.
  • Step #2 Separately, fork-mix eggs & buttermilk, then add to dry ingredients.
  • Step #3 Stir until sticky batter is formed.
  • Step #4 Scrape batter onto well-floured surface & knead lightly.
  • Step #5 Shape batter into ball, then place this in round non-stick casserole that has been sprayed with cooking spray.
  • Step #6 Mark a cross in the center, using a sharp knife.
  • Step #7 Bake uncovered in preheated 350-degree oven for about 1 1/4 hrs.
  • Step #8 Wait 10-15 mins before attempting to remove bread from casserole & then cool on wire rack.
  • Step #9 If desired, cut loaf into quarters & then slice thinly.
