German Schweinepfeffer (peppered Pork) Recipe

Ingredients
  • 2 tbsps vegetable oil .
  • salt .
  • 12 oz pork loin, cut into thin slices .
  • cracked black pepper .
  • 1/2 c sliced parsley .
  • 1 c sliced onions .
  • 1/2 c red wine .
  • 1 c thinly sliced mushrooms

Directions
  • Step #1 Heat a large skillet over high heat until very hot.
  • Step #2 Carefully add the oil & then the pork strips.
  • Step #3 Add the mushrooms, pepper, onions, & salt.
  • Step #4 Continue cooking for 2 to 3 mins, or until cooked through, stirring frequently.
  • Step #5 Using a slotted spoon, remove the pork from the skillet & keep warm.
  • Step #6 Add the wine to the skillet & continue cooking until the mixture is reduced by half.
  • Step #7 Stir in the parsley, then return the meat to the skillet.
  • Step #8 Serve with freshly cooked noodles or spatzle.
  • Step #9 Makes 2 to 4 servings.
