Greek Spinach Quiche Recipe

Ingredients
  • 1/4 c butter or margarine, melted .
  • 1 c crumbled feta cheese .
  • 1 dash ground nutmeg .
  • 1 (10 oz) package frozen sliced spinach .
  • 1/4 tsp salt .
  • 1/2 tsp white pepper .
  • 2 tbsps all-purpose flour .
  • 3 eggs, beaten .
  • 1 c milk (recommended — low fat or 2%) .
  • pastry dough, for a 9-inch, one-crust pie .
  • 2 tbsps grated romano cheese

Directions
  • Step #1 Line a 9-inch quiche or pie dish with pastry; trim excess pastry around edges (you can decorate the edges with fluting or crimping or anything you want).
  • Step #2 Prick bottom & sides of pastry with a fork.
  • Step #3 Bake at 400F degrees F for 3 mins; remove this from oven, & prick with a fork.
  • Step #4 Bake for 5 more mins.
  • Step #5 Cook spinach according to package directions, omitting salt.
  • Step #6 Drain spinach thoroughly, pressing out excess water.
  • Step #7 Combine spinach & remaining ingredients in a mixing bowl; mix well.
  • Step #8 Pour mixture into prepared pastry shell.
  • Step #9 Bake at 350 degrees F for 30--35 mins, or until center is set.
  • Step #10 Let stand 10 mins before serving.
