Southwest Pinto Bean Soup Recipe

Ingredients
  • 2 bay leaves .
  • 2 garlic cloves, minced .
  • 3 quarts water .
  • 1 lb dried pinto beans .
  • 1 small dried chili, crushed .
  • bouquet garni .
  • 1 onion, cut into 8ths .
  • 1/2 tsp coriander seeds .
  • 6 peppercorns .
  • 2 tsps salt .
  • 2 lbs soup bones with meat

Directions
  • Step #1 Soak beans for 2 hrs, then drain.
  • Step #2 Combine beans with water, garlic, onion, soup bones, salt, & bouquet garni.
  • Step #3 Bring to a boil, cover, & reduce heat to simmer.
  • Step #4 Let simmer until beef & beans are tender (2 hrs).
  • Step #5 Discard bouquet garni & bones.
  • Step #6 Cut up the meat & return it to the soup.
  • Step #7 Reheat & serve this with flatbread.
