Creamy Chicken And Noodles For 2 Recipe

Ingredients

5 oz reduced-sodium cream of chicken soup (1/2 can) .
3/4 c sliced onions .
1/2 lb boneless skinless chicken breasts .
2 c water .
1 bay leaf .
1/4 tsp dried thyme leaves .
1/8 tsp white pepper .
1/4 tsp salt .
1/4 c fat-free buttermilk .
4 oz uncooked yolk-free wide egg noodles .
2/3 c sliced celery

Directions

Step #1 Cook pasta according to package directions, omitting salt.
Step #2 Drain; set aside.
Step #3 Meanwhile, bring water to a boil in Dutch over over high heat.
Step #4 Add chicken breasts, onions, salt, thyme, celery, bay leaf & pepper.
Step #5 Return to a boil.
Step #6 Reduce heat to low; simmer, uncovered, 35 mins.
Step #7 Remove chicken.
Step #8 Cut into 1/2 inch pieces; set aside.
Step #9 Increase heat to high.
Step #10 Return liquid in Dutch oven to a boil.
Step #11 Continue cooking until liquid & vegetables have reduced to 1 c.
Step #12 Remove from heat; discard bay leaf.
Step #13 Whisk in soup & buttermilk.
Step #14 Stir in chicken & pasta.
Step #15 Sprinkle top with parsley, if desired.
