Port Wine And Cherry Salad Recipe

Ingredients
  • Mayonnaise Dressing .
  • 1 c mayonnaise or salad dressing .
  • 3 tbsps orange juice .
  • 1 tbsp port wine .
  • 2 (3 oz) packages black cherry gelatin .
  • 1/2 c pecans, sliced .
  • 1 c unsweetened applesauce .
  • 3/4 c port wine .
  • 1 (16 oz) can dark sweet cherries, pitted, undrained .
  • 1 c boiling water .
  • 1 tbsp grated orange rind

Directions
  • Step #1 For the Salad: Drain cherries, reserving syrup.
  • Step #2 Add enough water to syrup to make 3/4 c liquid, if necessary.
  • Step #3 Cut cherries in half, & set aside.
  • Step #4 Dissolve gelatin in 1 c boiling water.
  • Step #5 Add cherry liquid & wine; stir in the applesauce.
  • Step #6 Chill until the consistency of unbeaten egg whites; fold in cherry halves & sliced pecans.
  • Step #7 Spoon mixture into a lightly oiled 4-c mold.
  • Step #8 Chill until firm.
  • Step #9 Unmold salad & serve this with mayonnaise dressing.
  • Step #10 For the Mayonnaise Dressing: Combine all ingredients; chill at least 1 hr.
