Hearty Beef Vegetable Stew Recipe

Ingredients
  • 1 1/2 lbs red potatoes, cut into 1-inch cubes .
  • 1 1/2 lbs lean chuck roast, cut into 1-inch cubes .
  • 1/8 tsp pepper .
  • 1/2 c sliced celery .
  • 3 medium carrots, cut into 1-inch slices .
  • 1 medium onion, sliced .
  • 1/2 tsp salt .
  • 1 (28 oz) can crushed tomatoes, undrained .
  • 3 tbsps quick-cooking tapioca .
  • 2 tbsps dried basil .
  • 2 tsps canola oil .
  • 1 tbsp sugar

Directions
  • Step #1 Combine tomatoes, sugar, tapioca, basil, salt & pepper in a bowl & let this stand for 15 mins.
  • Step #2 Place potatoes, carrots, onions, & celery in bottom of 5 quart slow-cooker.
  • Step #3 Brown meat cubes in oil over med-heat/flame until just browned; remove with slotted spoon to slow-cooker.
  • Step #4 Discard drippings.
  • Step #5 Pour tomato mixture over meat; cover slow-cooker & cook on high for 5-6 hrs or until meat & veggies are tender.
  • Step #6 Note: When I made this, after 4 hrs I reduced heat to low & stirred it all together.
  • Step #7 Then I let it cook on low for 1-2 hrs more & it came out perfect for me.
