Cactus Fruit-beaujolais Ice Recipe

Ingredients
  • 1 egg white .
  • 1/4 c granulated sugar .
  • 1/3 c water .
  • 1/2 lime, juice of .
  • 2 lbs prickly pears, very ripe (fruit of the cactus, 8-10 pieces) .
  • 2 c beaujolais wine (good quality is best)

Directions
  • Step #1 Place sugar & water in saucepan & bring to a boil, stirring just until sugar is dissolved.
  • Step #2 Remove from heat & let cool.
  • Step #3 In second saucepan, reduce Beaujolais to 1/2 c.
  • Step #4 Remove from heat & let cool.
  • Step #5 Wearing heavy gloves to avoid fine thorns, slice fruit in half lengthwise.
  • Step #6 Scoop out red pulp from skin & place this in food processor/blender or mixer.
  • Step #7 Whirl briefly, then press pulp & liquid through food mill to remove seeds.
  • Step #8 You should have 1 1/2 c of liquid.
  • Step #9 Combine fruit purée with sugar syrup, reduced wine, & lime juice.
  • Step #10 Beat the egg white until very frothy, & slowly add fruit mixture while still beating.
  • Step #11 Place in ice cream freezer & freeze according to manufacturer's directions.
