Orange-glazed Pork Roulade Recipe

Ingredients
  • 1 leek .
  • 2 tsps italian seasoning .
  • 1 fennel bulb .
  • 1 green bell pepper .
  • 1-2 carrot .
  • 1/3 c sliced sun-dried tomatoes .
  • 3 lbs boneless pork loin, butterflied .
  • 3 tbsps grated parmesan cheese .
  • 1/4 c orange marmalade .
  • 2 tbsps olive oil

Directions
  • Step #1 Preheat oven to 425°F.
  • Step #2 Chop green pepper, leek, carrot, & fennel bulb & sauté in oil for 5 mins.
  • Step #3 Stir in sun-dried tomatoes, Parmesan cheese, & Italian seasoning.
  • Step #4 Spread mixture over pork.
  • Step #5 Roll & tie.
  • Step #6 Cover up with foil wrap; roast seam side down for 10 mins.
  • Step #7 Reduce heat to 350°F; cook for another 45 mins.
  • Step #8 Uncover roast & brush with orange marmalade.
  • Step #9 Roast for 15 mins more, or until internal temperature reads 155°F.
