Pot Roast Smothered In Bacon And Onions Recipe

Ingredients
  • 1/4 tsp crushed red pepper flakes .
  • 2 tbsps flat leaf parsley, minced .
  • 1/2 lb thick-cut bacon, cut into 1/2-inch pieces .
  • 3 c dry white wine .
  • 12 large garlic cloves, sliced .
  • fresh ground black pepper .
  • 10 black peppercorns .
  • 2 1/2 lbs chuck roast, tied at 1-inch intervals .
  • 3 tbsps unsalted butter .
  • kosher salt .
  • 1 1/4 c water .
  • 1 bay leaf .
  • 20 whole allspice berries .
  • 3 lbs onions, very thinly sliced

Directions
  • Step #1 In large, enameled cast-iron casserole, melt 2 tbsp butter.
  • Step #2 Add bacon & cook over moderate-low heat, until most of the fat has rendered, stirring every once in awhile, about 10 mins.
  • Step #3 Transfer bacon with slotted spoon to paper-towel lined plate.
  • Step #4 With a sharp knife, cut roast between the strings into four 1-inch thick slabs.
  • Step #5 Spice up meat with salt & pepper.
  • Step #6 Working in 2 batches, turning once, until browned, cook roast in casserole over moderate high heat, about 6 min.
  • Step #7 Transfer to large plate.
  • Step #8 Lower heat to moderate for second batch if the butter starts to brown to quickly.
  • Step #9 Remove the strings & keep the steaks intact if possible.
  • Step #10 Preheat oven to 350*F.
  • Step #11 Add onions, garlic, 1/4 c water & 1 tsp salt to casserole.
  • Step #12 Cook over moderate high heat, stirring about 8 min.
  • Step #13 Transfer half the onions to a plate.
  • Step #14 Stir the remaining 1 tbsp butter into the onions in the casserole.
  • Step #15 Nestle the steaks into the onions (in the casserole), overlapping them slightly if necessary.
  • Step #16 Add allspice berries, crushed red pepper, peppercorns, & bay leaf & lay half of the reserved bacon over the steaks.
  • Step #17 Spread the remaining onions & bacon on top.
  • Step #18 Add the wine & the remaining 1 c water & bring to a simmer, then cover & cook over moderate high heat for 5 mins.
  • Step #19 Transfer casserole to oven & cook for 30 min.
  • Step #20 Reduce oven temp to 250* & continue braising for 1-1/2 to 2 hrs or until steaks are very tender.
  • Step #21 Turn oven off, uncover the casserole & let meat stand in oven for 30 min.
  • Step #22 Serve meat & onion in deep plates, spoon sauce on top & sprinkle with parsely.
