Ingredients
  • 1/2 c sliced green peppers .
  • 2 c white min rice, uncooked .
  • 1 (14 1/2 oz) can chicken broth (or bullion) .
  • 2 (8 oz) cans pineapple chunks in juice, undrained .
  • 1/2 c Shake-and-Bake, original chicken coating mix .
  • 1 lb boneless skinless chicken breasts, cut into strips (or tenders)

Directions
  • Step #1 Preheat oven to 400*.
  • Step #2 Mix rice, pineapple with juice, broth & green peppers in 13x9" baking pan.
  • Step #3 Measure 1/2 C coating mix & place this in plastic bag; coat chicken as directed on package.
  • Step #4 Place chicken on rice mixture.
  • Step #5 Bake 30 mins or until chicken is cooked through.
