Pumpkin Raisin Spice Bundt Cake Recipe

Ingredients
  • 1/4-1/2 tsp ground cloves (to taste) .
  • 1/2 tsp cinnamon (to taste) .
  • 3 eggs .
  • 1/2 tsp allspice (to taste) .
  • 1 (14 oz) can condensed milk .
  • 1 tsp vanilla .
  • 1/4 c canola oil .
  • 1 c raisins, plumped in warm water .
  • 1/2 c milk .
  • 1 egg yolk .
  • 1 c water .
  • 1 (18 1/4 oz) box spice cake mix, I use Duncan Hines .
  • 1 (3 1/2 oz) box instant vanilla pudding .
  • 1 (15 oz) can pumpkin puree, I use Libby's .
  • 3/4 c maple syrup

Directions
  • Step #1 First put the raisins into the warm water to plump them up.
  • Step #2 Do this before you start the cake & they should be good in 10 mins or so.
  • Step #3 Grease a 10 c bundt pan really well.
  • Step #4 For the Cake:.
  • Step #5 Empty the mix into a large bowl & add the vanilla pudding mix.
  • Step #6 Then add the pumpkin, water ,3 eggs, oil & the vanilla & mix well.
  • Step #7 Next add your spices altering them to your own tastes.
  • Step #8 The batter will be very thick.
  • Step #9 Drain the raisins & fold them into your batter.
  • Step #10 Pour into the prepared bundt pan.
  • Step #11 Bake at 350 for about 45-50 mins.
  • Step #12 Test to check for doneness since all oven are a little different.
  • Step #13 Cool Completely & drizzle glaze over the cake.
  • Step #14 For the Glaze:.
  • Step #15 In a small pot over med-heat/flame add the condensed milk, regular milk, egg yolk & syrup.
  • Step #16 Mix well & cook this until the mixture starts to thicken.
  • Step #17 Be careful not to burn the bottom of your pan.
  • Step #18 If it happens, simply strain the glaze into a bowl.
  • Step #19 Cool completely, & drizzle over cake.
