Beef Coconut Curry Recipe

Ingredients
  • 1/3 c mild curry paste .
  • 1 lb beef rump, sliced thinly (500gm) .
  • 2 tbsps peanut oil .
  • 1 yellow capsicum, sliced thinly .
  • 150 g green beans, halved .
  • 1 garlic clove, crushed .
  • 1 onion, sliced thinly .
  • 2 tsps ginger, grated .
  • 1 2/3 c coconut milk

Directions
  • Step #1 Heat half of the oil in wok; stir fry beef, in batches, til browned all over.
  • Step #2 Heat remaining oil in wok, stir fry onion til softened.
  • Step #3 Add ginger, garlic & curry paste, stir fry til fragrant.
  • Step #4 Stir in coconut milk; bring to a boil.
  • Step #5 Return beef to wok with capsicum & beans; stry fry until vegetables are just tender.
