Tacos Sudados Recipe

Ingredients
  • oil .
  • 1/2 onion .
  • 1 garlic clove .
  • 3 tbsps roasted peanuts .
  • 2 pasilla chiles .
  • 18 fresh tortillas .
  • 1/2 dry tortilla .
  • 5 ancho chilies .
  • 1 lb pork .
  • salt & pepper

Directions
  • Step #1 Boil the meat, drain it, save the broth it was cooked in & pick off any remaining hairs.
  • Step #2 Hollow out the chilis, toast them, & soak them in a little of the broth in which the meat was cooked.
  • Step #3 Fry the half tortilla.
  • Step #4 Liquify the chili pasillas, half fried tortilla, peeled peanuts, onion, garlic, salt & pepper.
  • Step #5 Fry everything until the flavor peaks.
  • Step #6 Add a little of the pork broth.
  • Step #7 Add the meat.
  • Step #8 Boil everything on low flame until it thickens.
  • Step #9 Fill the fresh tortillas with the meat.
  • Step #10 Fold them over into tacos & steam them until they "sweat.
  • Step #11 " Serve hot.
