Pacific Northwest Salad Recipe

Ingredients

1/2 tsp fresh ground pepper .
2 tbsps butter .
2/3 c pear juice .
1/4 tsp salt .
3 (4 oz) bags herb mixed salad greens (16 c) .
1/4 tsp fresh ground pepper .
4 pears, firm but ripe, unpeeled .
Salad .
2 tbsps extra-virgin olive oil .
1/2 c sliced toasted hazelnuts .
Vinaigrette .
6 tbsps seasoned rice vinegar .
1/8 tsp salt .
1 c crumbled blue cheese (4 oz)

Directions

Step #1 In small bowl, whisk together all vinaigrette ingredients.
Step #2 Can be made up to 3 days ahead.
Step #3 Cut 2 of the pears ito 1/2" pieces.
Step #4 Melt butter in heavy medium skillet over med-heat/flame.
Step #5 Add sliced pears; sprinkle with 1/4 tsp pepper & 1/8 tsp salt.
Step #6 Cook 4-6 mins or until golden brown & softened.
Step #7 Recipe can be made to this point up to 4 hrs ahead.
Step #8 Let stand at about room temp.
Step #9 Place cooked pears in center of 8 salad plates.
Step #10 In large bowl, toss salad mix with vinaigrette.
Step #11 Place on top of pears; sprinkle with cheese & nuts.
Step #12 Slice remaining 2 pears; arrange over greeens.
