Pacific Northwest Salad Recipe

Ingredients
  • 1/2 tsp fresh ground pepper .
  • 2 tbsps butter .
  • 2/3 c pear juice .
  • 1/4 tsp salt .
  • 3 (4 oz) bags herb mixed salad greens (16 c) .
  • 1/4 tsp fresh ground pepper .
  • 4 pears, firm but ripe, unpeeled .
  • Salad .
  • 2 tbsps extra-virgin olive oil .
  • 1/2 c sliced toasted hazelnuts .
  • Vinaigrette .
  • 6 tbsps seasoned rice vinegar .
  • 1/8 tsp salt .
  • 1 c crumbled blue cheese (4 oz)

Directions
  • Step #1 In small bowl, whisk together all vinaigrette ingredients.
  • Step #2 Can be made up to 3 days ahead.
  • Step #3 Cut 2 of the pears ito 1/2" pieces.
  • Step #4 Melt butter in heavy medium skillet over med-heat/flame.
  • Step #5 Add sliced pears; sprinkle with 1/4 tsp pepper & 1/8 tsp salt.
  • Step #6 Cook 4-6 mins or until golden brown & softened.
  • Step #7 Recipe can be made to this point up to 4 hrs ahead.
  • Step #8 Let stand at about room temp.
  • Step #9 Place cooked pears in center of 8 salad plates.
  • Step #10 In large bowl, toss salad mix with vinaigrette.
  • Step #11 Place on top of pears; sprinkle with cheese & nuts.
  • Step #12 Slice remaining 2 pears; arrange over greeens.
