Mustard-baked Eggs Recipe

Ingredients
  • salt, to taste (use sparingly) .
  • 2 tbsps light cream or heavy cream .
  • 2 tsps Dijon mustard .
  • 1/2 oz grated parmesan cheese (2 tbsps) .
  • black pepper, to taste .
  • 4 eggs

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Lightly butter or oil two 4" ovenproof ramekins or bowls.
  • Step #3 Mix together the cheese, salt, cream, mustard, & pepper.
  • Step #4 Crack two eggs into each ramekin.
  • Step #5 Pierce yolks with a toothpick.
  • Step #6 Bake eggs for 10 mins.
  • Step #7 Remove from oven & spoon the cheese-mustard mixture over each egg.
  • Step #8 Return to oven & bake another 5-6 mins until the eggs are done & the cheese has melted.
  • Step #9 Variation: Microwaved.
  • Step #10 Cover up ramekins with waxed paper.
  • Step #11 Cook eggs for 2 mins in microwave on high.
  • Step #12 Add cheese-mustard mixture.
  • Step #13 Cook for about 1 min longer on high.
  • Step #14 (These times are approximate, since microwave ovens vary.
  • Step #15 ).
