Potato Corn Bake Recipe

Ingredients
  • 2 c potato flakes .
  • 1/3 lb bacon, cut into 3/4-inch pieces .
  • 1 dash pepper .
  • 1 (15 oz) can creamed corn .
  • 2 tbsps sliced green onions (optional) .
  • 1/3 c sliced onions .
  • 3 tbsps butter or margarine .
  • 1/4 c parmesan cheese .
  • 1/2 c sour cream .
  • 2 c milk .
  • 1/2 c sliced green peppers .
  • 3/4 tsp salt

Directions
  • Step #1 Cook bacon until crisp; drain & set aside.
  • Step #2 In a large skillet, saute onion & green pepper in 1 tbsp reserved bacon fat for 1-2 mins; add corn, stirring frequently, salt, butter, & pepper & cook, milk, over med-heat/flame until bubbly.
  • Step #3 Remove skillet from heat; stir in the potato flakes & sour cream.
  • Step #4 Turn contents of skillet into a 9" square baking dish that has been coated with no-stick cooking spray.
  • Step #5 Top with bacon, parmesan cheese, & optional green onions.
  • Step #6 Bake at 375° for 20-25 mins.
