Step #1 Cook bacon until crisp; drain & set aside.
Step #2 In a large skillet, saute onion & green pepper in 1 tbsp reserved bacon fat for 1-2 mins; add corn, stirring frequently, salt, butter, & pepper & cook, milk, over med-heat/flame until bubbly.
Step #3 Remove skillet from heat; stir in the potato flakes & sour cream.
Step #4 Turn contents of skillet into a 9" square baking dish that has been coated with no-stick cooking spray.
Step #5 Top with bacon, parmesan cheese, & optional green onions.
