Cranberry Peach Cobbler Recipe

Ingredients
  • 2 (29 oz) cans unsweetened sliced peaches (I prefer no sugar added or in light juice) .
  • 1/3 c sugar .
  • 1 (15 5/8 oz) package cranberry quick bread mix .
  • 1/2 c butter, melted .
  • 2 tbsps orange zest, divided in half .
  • 1/3 c dried cranberries (I prefer Craisins) .
  • 1 egg

Directions
  • Step #1 Pour butter into 9X13 pan.
  • Step #2 Drain peaches, reserving 1 c juice.
  • Step #3 Pat peaches dry & set aside.
  • Step #4 In large bowl, mix quick bread mix, 1 Tbl of orange peel, egg, & reserved peach juice.
  • Step #5 Drop batter by tbsps over butter, spreading slightly.
  • Step #6 Arrange peaches over top.
  • Step #7 Sprinkle top with cranberries.
  • Step #8 Combine sugar & remaining orange peel & sprinkle it over peaches.
  • Step #9 Bake 375 degrees for 45-50 mins or until golden brown.
  • Step #10 Serve warm.
