Pinto Bean Quick Chalupas Recipe

Ingredients
  • 1 (15 oz) bag corn chips (such as Fritos) .
  • 1 tbsp cajun seasoning .
  • lettuce .
  • sour cream .
  • salsa .
  • 1 tsp garlic, minced .
  • 1/4 tsp cumin .
  • 1 lb pinto beans (or other bean of choice) .
  • Suggested Toppings .
  • 1 tsp baking soda .
  • 2 beef bouillon cubes .
  • 1 c onions, sliced .
  • tomatoes, sliced .
  • guacamole .
  • 4 slices bacon, uncooked & sliced .
  • shredded cheese .
  • 1 tsp dried cilantro

Directions
  • Step #1 In a large bowl, put pinto beans & baking soda.
  • Step #2 Cover up with water until water level is at least 2-3 inches higher than the beans.
  • Step #3 Let soak overnight.
  • Step #4 Drain & rinse beans.
  • Step #5 Place in crockpot & cover with water such that the water level is about 1 inch higher than the beans.
  • Step #6 Add onion, cilantro, cumin, bacon, garlic, Cajun seasoning, & boullion to crockpot.
  • Step #7 Cover up crockpot & cook on low for 6-8 hrs.
  • Step #8 Before serving, place approximately 1 c of corn chips for each serving desired in an oven safe container & warm for about 5 mins in the oven at 350 degrees.
  • Step #9 Serve beans over warm corn chips & top this with desired toppings.
