Melon And Champagne Jelly Recipe

Ingredients
  • 1 vanilla bean .
  • 500 g sugar .
  • 2-3 star anise pods .
  • 2 lemon slices .
  • 12 gelatin sheets .
  • 2 liters cubed watermelons or cantaloupes or honeydew melon (or combination) .
  • 1 (750 ml) bottle sparkling wine

Directions
  • Step #1 Place melon cubes in a serving dish, or divide between dishes if using several.
  • Step #2 Measure sparkling wine, sugar & spices into a saucepan & let simmer for 20 mins.
  • Step #3 Soak gelatin sheets in cold water, squeeze dry & dissolve in a small amount of hot wine mixture.
  • Step #4 Add the gelatin-wine mixture to the saucepan slowly, stirring constantly.
  • Step #5 Discard vanilla bean, lemon slices, star anise pods.
  • Step #6 Allow the wine mixture to cool to about room temp.
  • Step #7 Pour over melon cubes.
  • Step #8 Transfer the dessert into the fridge & cool until set.
