Citrus Shrimp And Rice Recipe

Ingredients
  • 2 tbsps orange marmalade .
  • 2 tbsps butter .
  • 2 c water .
  • 1 (6 1/4 oz) package Rice-A-Roni (fried rice) .
  • 1 lb shrimp, uncooked, peeled & deveined .
  • 1 1/2 c frozen sugar snap peas .
  • 1 tsp grated lemon peel

Directions
  • Step #1 Make sure that the tails & shell are removed from shrimp.
  • Step #2 In a skillet, cook rice with butter until lightly browned.
  • Step #3 Stir in water with seasoned packet.
  • Step #4 Heat to boil, reduce heat to low.
  • Step #5 Cover up & cook about 15 mins or until MOST of liquid is absorbed.
  • Step #6 Stir in marmalade, lemon peel & shrimp.
  • Step #7 Cover up & cook 5 more mins, stirring constantly until shrimp is done.
  • Step #8 Stir in pea pods, cover & cook 5 more mins or until pea pods are crisp tender.
