Healthy Tomato-tortellini Soup Recipe

Ingredients

1 garlic clove, minced .
2 tbsps parmesan cheese, grated .
3 c tomato juice (homemade or canned) .
3 tbsps tomato paste .
salt & freshly ground black pepper .
1/4 c dry red wine .
1 tbsp sweet chili sauce .
1/2 onion, sliced .
1 1/2 tsps italian seasoning .
1 tbsp unsalted butter .
2-3 small yellow squash, sliced .
1/2 (4 oz) package cheese-filled egg tortellini, uncooked

Directions

Step #1 In a stock pot, melt butter over MED-HI heat; saute onions & garlic.
Step #2 Add all ingredients except tortellini & Parmesan cheese.
Step #3 Bring to a boil.
Step #4 Reduce heat & let simmer, covered, for about 15 mins.
Step #5 While the mixture simmers, undercook, prepare tortellini according to package, slightly! Drain.
Step #6 Add tortellini to soup mixture & let simmer for about 5 mins.
Step #7 Adjust seasonings.
Step #8 Serve in bowls & top this with cheese.
