Healthy Tomato-tortellini Soup Recipe

Ingredients
  • 1 garlic clove, minced .
  • 2 tbsps parmesan cheese, grated .
  • 3 c tomato juice (homemade or canned) .
  • 3 tbsps tomato paste .
  • salt & freshly ground black pepper .
  • 1/4 c dry red wine .
  • 1 tbsp sweet chili sauce .
  • 1/2 onion, sliced .
  • 1 1/2 tsps italian seasoning .
  • 1 tbsp unsalted butter .
  • 2-3 small yellow squash, sliced .
  • 1/2 (4 oz) package cheese-filled egg tortellini, uncooked

Directions
  • Step #1 In a stock pot, melt butter over MED-HI heat; saute onions & garlic.
  • Step #2 Add all ingredients except tortellini & Parmesan cheese.
  • Step #3 Bring to a boil.
  • Step #4 Reduce heat & let simmer, covered, for about 15 mins.
  • Step #5 While the mixture simmers, undercook, prepare tortellini according to package, slightly! Drain.
  • Step #6 Add tortellini to soup mixture & let simmer for about 5 mins.
  • Step #7 Adjust seasonings.
  • Step #8 Serve in bowls & top this with cheese.
