Beef Burritos Recipe

Ingredients
  • 1 small onion, finely sliced .
  • 1 tsp hot paprika .
  • 1 onion, finely sliced .
  • 1/2 c water .
  • 1 c cheddar cheese, grated .
  • 3/4 c sour cream .
  • 2 tsps lemon juice or lime juice .
  • FILLING .
  • 1 1/4 oz taco seasoning mix (35gm) .
  • 1 tbsp cilantro, finely sliced .
  • GUACAMOLE .
  • 500 g minced beef (1lb) .
  • 1 (14 oz) can sliced tomatoes (440gm) .
  • 1 small tomato, seeded & sliced .
  • 1 (10 oz) can kidney beans, drained (300gm) .
  • 2 garlic cloves, crushed .
  • 4 large round flour tortillas .
  • 1 large avocado .
  • 3 drops Tabasco sauce .
  • 1 tbsp olive oil

Directions
  • Step #1 Make the beef & bean filling: heat oil in pan, stirring, cook beef, til browned.
  • Step #2 Add onion & garlic, stirring, cook, til onion is soft.
  • Step #3 Stir in undrained can of tomatoes & remaining ingredients; simmer uncovered 15 mins or til mixture is thickened.
  • Step #4 Divide warm beef & bean filling among the tortillas, roll; secure with toothpicks.
  • Step #5 Placed filled tortillas on greased oven tray, sprinkle with cheese & bake in moderate oven about 10 mins or til cheese melts.
  • Step #6 Meanwhile, make the guacamole: mash avocado with fork, add remaning ingredients & mix well.
  • Step #7 To serve: remove toothpicks from tortillas, served topped with guacamole, sour cream & cilantro.
