Ingredients
1/4 tsp salt .
1/4 tsp ground ginger .
egg wash .
2-2 1/4 c whole wheat flour (read NOTE*) .
1/4 c light brown sugar, to taste .
1 tsp cinnamon .
1/2 c water .
1/3 c canola oil .
2 tbsps dried dates (optional) or dried apricots, minced small (optional) .
1 dash freshly grated nutmeg .
1 tbsp sugar .
Filling .
1/3 c apples, peeled, seeded & grated .
1/2 tsp baking powder .
1 c pumpkin puree, canned .
1 tbsp honey .
Pastry .
1/4 tsp ground cloves
Directions
Step #1 * NOTE: Can substitute half the amount of unbleached white pastry flour for the whole wheat pastry flour.
Step #2 Preheat oven to 375 degrees.
Step #3 Lightly oil an aluminum baking sheet or line the baking sheet with parchment paper.
Step #4 To make the dough, baking powder, sugar, mix the flour, & salt in a mixing bowl.
Step #5 Make a well in the center of the flour & pour in the oil & water.
Step #6 With your hands, work the mixture to form a soft dough, adding more dough if necessary so that it loses its stickiness.
Step #7 Cover up dough, set aside & let rest.
Step #8 Meanwhile, mix the filling ingredients & mix well.
Step #9 Now on a floured surface roll out the prepared dough to 1/16" thickness.
Step #10 Use a 3" round cookie cutter to cut out the dough.
Step #11 (You could also use a tortilla press to form the turnovers.
Step #12 ) Place one heaping tsp of the pumpkin filling on one side of each circle, fold over, slightly dampen edges with water, & pinch edges shut.
Step #13 I use my dim sum maker to seal the turnovers.
Step #14 Arrange the turnovers singly on the prepared baking sheet, brush lightly with egg wash & bake about 20 mins or until golden brown.
Step #15 Cool on rack.
Step #16 The uncooked, filled turnovers can be frozen.
