Hot, Hot Chillie Paste ( Sambal ) - Indonesian Sauce Recipe

Ingredients
  • 1/4 c sugar .
  • 1/2 c dried Thai chiles or 1 c habanero peppers .
  • 1/2 tsp salt .
  • 1/4 c lemon juice .
  • 1 small onion .
  • 1/4 c water .
  • 2 minced garlic cloves

Directions
  • Step #1 In a mixer or food processor/blender, lemon juice, garlic, sugar, onion, mix chilies, water, & salt; whirl until onions are finely minced.
  • Step #2 Pour mixture into 1 to 2 quart pan & cook over med-heat/flame, stirring every once in awhile, until reduced to about 1/2 c (about 10 mins).
  • Step #3 Serve at about room temp.
