Step #1 Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; lb chicken breast to 1/4 inch thickness, remove the top sheet & season this with salt & pepper.
Step #2 Combine the goat cheese, lemon rind, & apple; divide the apple mixture among the chicken breast & spread the mixture evenly over half the surface of each breast; fold each breast in half & press the edges together, forming a pocket.
Step #3 Sprinkle top the flour onto a sheet of waxed paper.
Step #4 In a small bowl mix the egg & water; In a shallow bowl, mix the bread crumbs & Parmesan cheese.
Step #5 Dust each chicken breast lightly with flour & dip into egg mixture, moistening all surfaces.
Step #6 Coat with bread crumb mixture, bring the chicken to room temperture, patting the crumbs carefully in place;(The chicken can be prepared to this point several hrs ahead; cover & put in the fridge, when ready to cook,).
Step #7 In a large, about 8 to 10 mins per side, heavy skillet, heat butter & oil over med-heat/flame; Add chicken; cook this until browned & cooked through, drain on paper towles & serve.
