Ingredients
1/2 tsp dried thyme .
1 c cottage cheese .
1/2 tsp salt .
1/2 c light sour cream .
1/4 c grated parmesan cheese .
8 large eggs, beaten .
fresh ground pepper .
1 (10 oz) package spinach, thawed & squeezed dry .
1 c grated cheddar cheese
Directions
Step #1 In a mixing bowl, mix all the ingredients.
Step #2 Pour mixture into an 11x8 baking dish that has been sprayed with cooking spray.
Step #3 Bake, uncovered, in a 350° oven for about 40 mins or until eggs are set.
Step #4 Let stand for 10 mins.
Step #5 Cut into squares & serve.
