Salmon Fillets Ragout Recipe

Ingredients
  • 1 white onion, sliced into rings .
  • 1 garlic clove, minced .
  • 1/2 tsp tarragon, crumbled .
  • 1/4 c heavy cream .
  • 1/4 c fresh lemon juice, squeezed .
  • 1/3 c clam juice .
  • 4 salmon fillets .
  • 3 c assorted mushrooms, sliced .
  • 3 tbsps butter .
  • 1/3 c white wine .
  • 2 tbsps olive oil

Directions
  • Step #1 Melt butter in skillet.
  • Step #2 Add garlic & onion & sautee about 3 mins.
  • Step #3 Reduce heat to medium.
  • Step #4 Add mushrooms & sautee until mushrooms are tender about 8 mins.
  • Step #5 Add clam juice & wine & bring to a boil.
  • Step #6 Continue to cook this until liquid turns syrupy about 15 mins.
  • Step #7 Add cream & boil for 2 mins.
  • Step #8 Stir in tarragon, salt & pepper.
  • Step #9 Remove from stove.
  • Step #10 Meanwhile, place salmon on a greased baking dish in a single layer.
  • Step #11 Brush fillets with olive oil & lemon juice.
  • Step #12 Broil salmon 4 inches from heat source, for about 8 mins.
  • Step #13 Turn salmon over & broil for another 8 mins.
  • Step #14 Plate salmon.
  • Step #15 Top with mushroom ragout.
  • Step #16 Serve.
