Carrot Salad (shlada Disjada) Recipe

Ingredients
  • 1/8 tsp red chili powder .
  • 3 tbsps lemon juice .
  • 1 tsp paprika .
  • 1 lb carrots, scraped, washed & sliced into thin rounds .
  • 1/2 tsp powdered cumin .
  • 1 1/2 tsps salt .
  • 4 tbsps olive oil .
  • 4 tbsps finely sliced fresh coriander leaves .
  • 4 garlic cloves, crushed

Directions
  • Step #1 Put the carrots, garlic & 1 tsps of salt In a large-ish saucepan.
  • Step #2 Cover up with water & bring to a boil.
  • Step #3 Cover up & cook on medium heat for 10 mins & then drain.
  • Step #4 Heat oil in a pan.
  • Step #5 Stir fry carrots in the oil on medium heat for 10 mins or until the carrots are cooked.
  • Step #6 Mix the remaining ingredients in a salad bowl.
  • Step #7 Stir in the carrots.
  • Step #8 Serve hot or cold.
