Cajun Shrimp Bisque Recipe

Ingredients
  • 1 onion, finely sliced .
  • 3 tbsps flour .
  • 3 tbsps butter .
  • 2 stalks celery, finely sliced .
  • 8 oz cooked shrimp .
  • 1 bay leaf .
  • chives .
  • 1 sprig thyme .
  • salt & pepper .
  • 4 c fish stock or chicken stock .
  • 1 garlic clove, minced .
  • 1/8 tsp dry mustard .
  • 1/8 tsp cayenne pepper .
  • 2 tsps paprika

Directions
  • Step #1 Melt the butter & add the onion, celery, & garlic.
  • Step #2 Cook carefully to soften.
  • Step #3 Stir in the mustard, paprika, cayenne, & flour.
  • Step #4 Cook about 3 mins over gentle heat, stirring every once in awhile.
  • Step #5 Pour on stock slowly, stirring until well mixed.
  • Step #6 Add the thyme & bay leaf & bring to a boil.
  • Step #7 Reduce the heat & let simmer about 5 mins or until thickened, stirring every once in awhile.
  • Step #8 Add the shrimp & heat through for about 2 mins.
  • Step #9 Spice up with salt & pepper to taste & top this with chives before serving.
