Mediterranean Pot Stickers Recipe

Ingredients
  • 2 tsps olive oil .
  • 2 tbsps water .
  • 1/2 c hot water .
  • 2 c cooked lentils .
  • 1 garlic clove, minced .
  • 1/3 c crumbled feta cheese .
  • 1/2 tsp grated lemon peel .
  • 1/4 c finely sliced onions .
  • 1 tbsp fresh dill weed .
  • plain yogurt (optional) .
  • 1 tsp capers, sliced .
  • 1/4 tsp pepper .
  • 12 (6 inch) round egg roll wraps

Directions
  • Step #1 Combine the lentils, garlic, dill, onion, feta cheese, capers, lemon peel & pepper in a medium mixing bowl; set aside.
  • Step #2 Cover up egg roll skins with plastic wrap to prevent drying.
  • Step #3 Place 2 tbsps lentil mixture on bottom half of one circle, 1/4" from edge.
  • Step #4 Brush edges lightly with water.
  • Step #5 Fold top half over, pressing with fingers to seal.
  • Step #6 Bring the corners of half circle together, overlapping slightly.
  • Step #7 Brush lightly with water to seal.
  • Step #8 (Keep pot stickers covered.
  • Step #9 ) Repeat with remaining filling & egg roll skins.
  • Step #10 Spray a 12" skillet with cooking spray.
  • Step #11 Heat oil over med-heat/flame; add pot stickers.
  • Step #12 Cook 2-3 mins or until bottoms of pot stickers are light golden brown.
  • Step #13 Add hot water.
  • Step #14 Cover up & reduce heat to medium-low.
  • Step #15 Simmer 8-10 mins or until water boils off & bottom of pot stickers are golden brown.
  • Step #16 Serve warm with a dollop of plain yogurt, if desired.
  • Step #17 Makes 6 servings.
