Romanian Marinated Mushrooms Recipe

Ingredients
  • sliced fresh parsley .
  • 2 tbsps olive oil .
  • 1/8 tsp cayenne .
  • 1/4 tsp dried thyme .
  • 3 tbsps fresh lemon juice .
  • 3 garlic cloves, minced .
  • 1/4 c olive oil .
  • 1/2 c red wine vinegar .
  • 3 bay leaves .
  • 2 c canned tomatoes (28-oz can) .
  • 1/2 tsp fresh ground black pepper .
  • 1 c sliced onions .
  • 2 1/2 lbs bite sized mushrooms .
  • salt .
  • 1 lemon, cut into wedges .
  • 1/2 tsp sugar (optional) .
  • 1/2 tsp dried marjoram

Directions
  • Step #1 Saute mushrooms in 1/4 c olive oil until just tender.
  • Step #2 Drain the mushrooms, toss with lemon juice & transfer to a bowl.
  • Step #3 Add 2 Tbsp oil to the skillet & cook the onions until they begin to turn tranlucent.
  • Step #4 Add the garlic & saute for a few more mins until the onions are golden, but not browned.
  • Step #5 Stir in the pepper, marjoram, thyme, & bay leaves & saute for another min.
  • Step #6 Drain the tomatoes & reserve 1/3 c of juice.
  • Step #7 Coarsely chop the tomatoes & mix them into the onions along with the reserved tomato juice, cayenne, vinegar, salt & sugar.
  • Step #8 Simmer on low heat, covered for 20-25 mins, stirring every once in awhile.
  • Step #9 Allow the marinade to cool for serveral mins & then pour it over the mushrooms.
  • Step #10 Chill, covered for at least 12 hrs.
  • Step #11 Bring the mushrooms to about room temp before serving.
  • Step #12 Garnish with lemon wedges & parsley.
