Asian Duck Salad Recipe

Ingredients
  • 2 duck breasts, skin removed .
  • 100 g bean sprouts, trimmed .
  • Dressing .
  • 100 g snow peas, trimmed & thnly sliced .
  • 100 g sugar snap peas, trimmed .
  • 1 tbsp tamari .
  • 1 red chili, deseeded thinly sliced .
  • 1 tsp ginger, finely frated .
  • 0 coriander leaves .
  • 1 tsp sesame oil .
  • 2 garlic cloves, crushed .
  • 1/4 fresh lime juice .
  • 1 carrot, peeled & julienned .
  • 20 g sliced almonds .
  • 200 g Chinese cabbage, finely shredded .
  • 1/4 tsp honey

Directions
  • Step #1 To make dressing mix all ingredients in a bowl & mix well.
  • Step #2 Heat a non-stick frying pan, Add duck & cook 5 mins each side.
  • Step #3 Remove & cover to stand for 10 mins.
  • Step #4 Meanwhile mix carrot, snow peas, sugar snap peas, & chilli in heatproof bowl.
  • Step #5 Cover up with boiling water & drain as soon as possible & refresh under cold water.
  • Step #6 Drain, return to bowl.
  • Step #7 Thinly slice duck across the grain.
  • Step #8 Add to carrot mixture along with cabbage, shallots, bean sprouts, coriander & almonds.
  • Step #9 Drizzle as much dressing over salad as you like & toss to mix.
  • Step #10 Serve.
