Poached Salmon With Dill Sauce Recipe

Ingredients
  • 1 tsp white pepper .
  • 1 tbsp fresh dill .
  • 1 tbsp lemon juice .
  • 1 pinch cayenne .
  • 1 1/2 lbs fresh salmon fillets .
  • 2 tsps flour .
  • 1 tsp butter or soy margarine .
  • 1 1/2 c white wine .
  • 1 pinch salt

Directions
  • Step #1 Cut salmon fillets into 4 portions.
  • Step #2 In a large saucepan, bring white wine to a simmer.
  • Step #3 Place fillets in saucepan; cover.
  • Step #4 Poach 12 mins, or until the inner flesh has turned light pink.
  • Step #5 Remove salmon with slotted spatula, cover, & place this in 250 degree oven.
  • Step #6 Combine hot poaching liquid in mixer with remaining ingredients.
  • Step #7 Process for 1 min.
  • Step #8 Always be careful when mixing hot liquids! Return to saucepan & whisk until thickened.
  • Step #9 Serve poached salmon fillets with dill sauce spooned on top.
